Shiraito Shuzo (Sake Brewery)
About this place
Shiraito Shuzo is a sake brewery that maintains the traditional hand-pressing method known as “Haneki,” using a large wooden lever to gently extract sake over time. This old-fashioned technique, rare across Japan, contrasts with modern mechanical pressing by minimizing stress and unwanted flavors in the sake, resulting in a smooth and deep taste. Located in the natural surroundings of Itoshima City, Fukuoka Prefecture, the brewery continues to produce sake with this historic craftsmanship.
A key product from this brewery is “Tanaka Rokujugo,” made exclusively with 100% Itoshima-grown Yamada Nishiki rice. Polished to 65%, this sake balances the original rice flavor with a fresh acidity. It is designed to pair well with food and is served onboard the luxury JR Kyushu sleeper train, “Seven Stars in Kyushu.”
Each year around February, the brewery hosts a lively event called “Kura-biraki” or brewery opening. This occasion draws many sake enthusiasts from within and outside the prefecture. Visitors gather to sample new sake, including cloudy and freshly made varieties, and to purchase limited edition bottles, creating a bustling atmosphere around the brewery.
